Ingredients
- 4 boneless chicken breasts
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/4 cup chicken broth
- 1/4 cup white wine
- 1 can (14oz) diced tomatoes
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 1 cup cooked white rice
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped red onion
- 1/2 cup canned corn, drained
- 1/2 cup canned black beans, drained
- 1 tbsp lime juice
- 8 small flour tortillas
- 1/2 cup sour cream
- 1/4 tsp chili powder
- 1/4 tsp dried oregano
- 1/4 tsp ground cumin
- Shredded lettuce and chopped tomatoes for serving (optional)
Instructions
Everyday Chicken Tomato Sauce
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side or until browned. Remove from the skillet and set aside.
- In the same skillet, add the onions and garlic and cook for 2-3 minutes or until soft. Add the paprika and oregano and cook for another minute.
- Add the chicken broth and white wine and stir to combine. Add the diced tomatoes and bring the mixture to a boil.
